Lamb with Mint and Pistachio Gremolata

A delightful mix of flavors and textures, featuring juicy lamb paired with a vibrant mint and pistachio gremolata.

  • 2 racks Lamb Racks
  • 1 teaspoon Smoked Paprika
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 1 cup Fresh Mint Leaves
  • 1/4 cup Fresh Italian Parsley (optional)
  • 1/2 cup Pistachio Nuts
  • 2 cloves Garlic Cloves
  • 1/4 cup Olive Oil
  • 1/2 cup Pomegranate Seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat lamb racks dry and season with salt, pepper, and smoked paprika.
  3. Heat olive oil in a skillet over medium-high heat; sear lamb for 2-3 minutes on each side.
  4. Transfer to a baking sheet and roast for 15-20 minutes, aiming for 145°F (63°C) for medium-rare.
  5. Let lamb rest for 5-10 minutes after removing from the oven.
  6. In a food processor, combine the mint leaves, parsley, pistachios, garlic, lemon zest, lemon juice, and salt. Pulse until finely chopped, then drizzle in olive oil until well combined.
  7. Slice the lamb into individual chops and top with gremolata. Sprinkle pomegranate seeds on top if desired.

Notes

For added flavor, consider marinating the lamb beforehand and using fresh ingredients for the gremolata.
