Loaded Baked Potato Soup

A creamy and comforting soup that combines the classic flavors of a loaded baked potato.

Ingredients

  • 2 cups mashed potatoes
  • 4 cups chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1 cup cooked bacon, crumbled
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, pour in 4 cups of chicken broth and add 2 cups of mashed potatoes. Stir over medium heat until well blended and warmed through.
  2. Slowly add the shredded cheddar cheese and sour cream, stirring until melted and combined.
  3. Add the cooked bacon and chopped green onions into the soup mix and stir to combine.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with additional bacon, cheese, and green onions if desired.

Notes

For a thicker soup, consider blending after cooking or adding more mashed potatoes. Customize toppings to suit your taste.
