Moist Pineapple Juice Cake

  • 1 cup Pineapple Juice
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 2 teaspoons Baking Powder
  • 1/2 cup Vegetable Oil
  • 1 cup Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the flour and baking powder.
  3. In another bowl, whisk the granulated sugar and vegetable oil together until blended.
  4. Add the eggs and pineapple juice, and beat until smooth.
  5. Gradually add the dry ingredients into the wet mixture and stir gently until combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  9. For the glaze, mix powdered sugar with pineapple juice until you reach your desired consistency, then drizzle it over the cooled cake.
