1 lb ground beef
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Italian seasoning
1 cup mozzarella cheese, cut into small cubes
2 tbsp olive oil
Instructions
In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, black pepper, and Italian seasoning. Mix until well combined.
Flatten a small amount of the meat mixture in your hand, place a cube of mozzarella in the center, and encase it with the meat, rolling it into a ball.
Heat olive oil in a skillet over medium heat and cook the meatballs for 6-8 minutes, or bake at 400°F for 20-25 minutes until browned and cooked through.
Notes
For best flavor, use fresh ingredients. Avoid over-mixing the meatball mixture to prevent toughness.
