Orange Cranberry Bread

A delightful blend of tart cranberries and zesty orange, this easy-to-make bread is perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons orange zest
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and greasing a 9×5 inch loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; whisk until well mixed.
  3. Add chopped cranberries and stir to coat.
  4. In another bowl, mix orange juice, vegetable oil, eggs, and orange zest until well combined.
  5. Pour wet mixture into dry ingredients and stir gently until just combined.
  6. Transfer batter to prepared loaf pan and smooth the top.
  7. Bake for 50 to 60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Prepare glaze by mixing powdered sugar with orange juice until smooth and drizzle over cooled bread.

Notes

Serve with butter or drizzled with a sweet glaze. Can be stored at room temperature, in the refrigerator, or frozen for longer storage.
