  • 2 large sweet potatoes, peeled and diced
  • 2 apples, diced
  • 1 cup raisins
  • 4 eggs
  • 1/2 cup almond milk
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the diced sweet potatoes, diced apples, raisins, and optional chopped nuts. Mix well.
  3. In a separate bowl, whisk together the eggs, almond milk, cinnamon, and honey or maple syrup until smooth.
  4. Pour the egg mixture over the sweet potato mixture and gently stir until everything is coated.
  5. Grease a baking dish to prevent sticking.
  6. Pour the combined mixture into the greased baking dish and spread it evenly.
  7. Bake for 30-40 minutes or until sweet potatoes are tender and the top is golden brown.
