Pumpkin BBQ Jalapeño Meatballs

A delicious twist on classic meatballs combining pumpkin, BBQ sauce, and jalapeño for an irresistible flavor.

  • 1 lb ground beef
  • 1/2 cup pumpkin puree
  • 1/2 cup BBQ sauce
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 jalapeño, sliced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Ground turkey or chicken (optional)
  • Gluten-free breadcrumbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground beef, pumpkin puree, BBQ sauce, breadcrumbs, egg, minced garlic, and sliced jalapeño. Season with salt and pepper.
  3. Mix everything together until well combined, then shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake the meatballs for 20-25 minutes, or until cooked through with an internal temperature of 160°F (70°C).
  5. While baking, heat additional BBQ sauce in a saucepan on low and add any reserved jalapeño slices to simmer.
  6. Once the meatballs are done, toss them in the warm BBQ sauce and serve garnished with fresh parsley and extra jalapeño slices.

Feel free to customize the meatballs with your favorite meats or sauces, and adjust the heat level by modifying the jalapeño amount.
