  • ½ cup Butter (for crumb topping or melted coconut oil)
  • Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  • In a large bowl, mix the flour, sugar, baking powder, cinnamon, and salt until combined.
  • In another bowl, whisk together the pumpkin puree, eggs, milk, and oil.
  • Pour the wet ingredients into the dry ingredients and stir just until combined.
  • In a separate bowl, mix the crumb topping ingredients until crumbly.
  • Scoop the muffin batter into prepared tins, filling each about 3/4 full. Sprinkle the crumb topping.
  • Bake for 18-22 minutes or until a toothpick comes out clean.
  • Cool in the tin for 5 minutes before transferring to a wire rack.
