2 cups pumpkin puree (or fresh roasted pumpkin)
1 cup pecans, chopped (or walnuts/almost chopped)
1 cup granulated sugar (or maple syrup/honey)
1 tsp ground cinnamon (or nutmeg/pumpkin pie spice)
¾ cup all-purpose flour (or gluten-free flour blend)
½ cup unsalted butter, melted (or plant-based butter/coconut oil)
½ tsp salt (or sea salt/Himalayan salt)
Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
In a large bowl, mix pumpkin puree, sugar, cinnamon, salt, and melted butter until smooth.
Gently fold in half of the chopped pecans into the pumpkin mixture.
In another bowl, whisk together flour with the remaining sugar and walnuts; pour this over the pumpkin filling without stirring.
Pour hot water gently into the dish around the edges and bake for 40-45 minutes until edges are firm and center is slightly wobbly.
Allow to cool slightly before serving warm with vanilla ice cream or chilled.
