  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ½ cup unsalted butter, melted (or plant-based butter/coconut oil)
  • ½ tsp salt (or sea salt/Himalayan salt)
  • Instructions

  • Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  • In a large bowl, mix pumpkin puree, sugar, cinnamon, salt, and melted butter until smooth.
  • Gently fold in half of the chopped pecans into the pumpkin mixture.
  • In another bowl, whisk together flour with the remaining sugar and walnuts; pour this over the pumpkin filling without stirring.
  • Pour hot water gently into the dish around the edges and bake for 40-45 minutes until edges are firm and center is slightly wobbly.
  • Allow to cool slightly before serving warm with vanilla ice cream or chilled.
