Savory Chicken Thighs and Rice

A comforting one-pan meal featuring juicy chicken thighs and flavorful rice, perfect for family dinners.

  • 1 pound Chicken Thighs (skin-on or skinless)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika (smoked recommended)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Unsalted Butter
  • 1 medium Onion (Yellow or White)
  • 3 cloves Garlic
  • 1 cup Long-Grain White Rice
  • 2 cups Chicken Broth
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder (optional)
  • 2 tablespoons Fresh Parsley

Instructions

  1. Pat the chicken thighs with paper towels and season with salt, pepper, and paprika.
  2. Heat olive oil and butter in a large pan over medium-high heat. Add chicken thighs and cook for 5-7 minutes on one side, then flip and cook for another 5 minutes.
  3. Remove chicken from the pan and set aside. In the same pan, sauté chopped onion for 3-4 minutes until soft, then add minced garlic for 1 minute.
  4. Stir in rice and toast for 1-2 minutes.
  5. Pour in chicken broth, add seasonings, and return chicken to the pan, ensuring it’s partially submerged in the broth.
  6. Bring to a simmer, cover, reduce heat to low, and cook for 20-25 minutes.
  7. Check rice for doneness and if necessary, let it cook longer.
  8. Let the dish rest with the lid on for 5 minutes before serving.
  9. Garnish with fresh parsley before serving.

For variations, consider adding vegetables, using different proteins, or switching rice with quinoa.
