A tender and flavorful chicken dish cooked in a slow cooker with creamy cheeses, sun-dried tomatoes, and spices.

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Onion Powder
  • 1 tablespoon Italian Seasoning
  • 2 tablespoons Olive Oil
  • 1 medium Shallot, chopped
  • 3 cloves Garlic, minced
  • 1 cup Sun-dried Tomatoes
  • 1 cup Low-Sodium Chicken Broth
  • 1 teaspoon Chili Crunch Oil
  • 2 tablespoons Cornstarch
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 cup Blended Cottage Cheese
  • 1 bunch Fresh Basil, for garnish

Instructions

  1. Place the boneless, skinless chicken breasts into the slow cooker, evenly spread out.
  2. Sprinkle kosher salt, pepper, and onion powder over the chicken breasts.
  3. Drizzle olive oil over the seasoned chicken.
  4. Add chopped shallot and minced garlic on top of the chicken.
  5. Include the sun-dried tomatoes in the slow cooker.
  6. Pour low-sodium chicken broth over the chicken and other ingredients.
  7. Add chili crunch oil and Italian seasoning evenly.
  8. Set the slow cooker to low and cook for 6 to 8 hours, or high for 3 to 4 hours.
  9. Mix cornstarch with a small amount of water in a separate bowl to create a slurry and stir this into the sauce in the slow cooker to thicken it; cook for another 15-20 minutes on high.
  10. Stir in grated Parmesan and blended cottage cheese until melted and combined.
  11. Garnish with freshly chopped basil before serving.
