Savory Ground Turkey & Roasted Veggie Rice Bowl

A colorful and nutritious dish featuring lean ground turkey and roasted vegetables, perfect for a hearty weeknight dinner.

  • 1 lb lean ground turkey
  • 1 cup chopped bell peppers (mixed colors)
  • 1 cup sliced zucchini
  • 1 medium red onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • 2 cups cooked rice (white or brown)
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped bell peppers, sliced zucchini, chopped red onion, and minced garlic. Drizzle with olive oil and sprinkle with salt, pepper, and paprika. Toss to coat.
  3. Spread the vegetable mixture on a baking sheet lined with parchment paper and roast for 20 minutes, until tender.
  4. While the vegetables roast, heat a skillet over medium-high heat and add the ground turkey. Cook until browned, about 5-7 minutes, seasoning with salt, pepper, and paprika.
  5. Once the vegetables are roasted and turkey is cooked, combine both in the skillet.
  6. Serve by placing a portion of cooked rice in a bowl and topping it with the turkey and vegetable mixture. Add fresh herbs if desired.
