Savory Homemade Jambalaya

A delicious and hearty one-pot meal featuring chicken, sausage, rice, and spices, perfect for family dinners and gatherings.

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground cayenne (adjust according to spice preference)
  • 12 ounces andouille or smoked sausage
  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • 3 medium scallions (chopped)
  • 1 small yellow onion (chopped)
  • 2 medium stalks celery (chopped)
  • 1 medium green bell pepper (chopped)
  • 4 cloves garlic (minced)
  • 2 cups medium or long-grain white rice
  • 4 cups water or low-sodium chicken broth
  • To taste vinegar-based hot sauce (optional)

Instructions

  1. Gather and prepare all your ingredients by chopping vegetables and dicing the meats.
  2. Mix the garlic powder, onion powder, paprika, ground white pepper, and cayenne pepper in a small bowl.
  3. In a large pot, heat oil over medium heat and sauté the sausage for about 5 minutes until browned.
  4. Add the diced chicken thighs and cook until no longer pink, about 5-7 minutes.
  5. Stir in the chopped onion, celery, and bell pepper, and sauté for 3-4 minutes until softened.
  6. Add the minced garlic and the prepared spice mix, cooking for 1 minute until fragrant.
  7. Pour in the rice and stir well to coat with the flavor mixture.
  8. Add the water or broth and kosher salt and bring to a boil.
  9. Once boiling, lower the heat, cover, and let simmer for 20-25 minutes.
  10. Remove from heat and let rest for 5 minutes, still covered.
  11. Fluff the rice with a fork, adjust seasoning if needed, and serve with hot sauce if desired.

Notes

Customize your jambalaya by adjusting proteins and spices. Serve with parsley or scallions for garnish.
