Savory Vinegar Fingerling Potatoes

Delicious fingerling potatoes infused with vinegar, providing a unique tang and texture perfect for any meal.

  • 1 pound fingerling potatoes
  • 1 teaspoon kosher salt
  • 1 cup distilled white vinegar
  • 2 tablespoons olive oil
  • Freshly ground black pepper to taste

Instructions

  1. Wash the fingerling potatoes under cool water, then slice them in half lengthwise.
  2. Place the halved potatoes in a large pot, add the distilled white vinegar and enough water to cover them.
  3. Sprinkle in the kosher salt and bring to a boil, cooking for about 10-12 minutes until fork-tender.
  4. Drain the potatoes and let them cool.
  5. In a skillet, heat olive oil over medium heat and sauté the drained potatoes for 5-7 minutes until golden brown and crispy.
  6. Season with freshly ground black pepper and toss to combine.
  7. Serve warm, garnished with fresh herbs if desired.
