Shrimp and Vegetable Stir Fry

A quick and easy stir fry combining tender shrimp and crisp vegetables in a flavorful sauce, perfect for busy weeknights.

  • 1 pound shrimp, peeled and deveined
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add minced garlic and ginger, sauté for about 1 minute until fragrant.
  3. Add shrimp and cook for 3-4 minutes until they turn pink.
  4. Stir in mixed vegetables and cook for about 5-7 minutes until tender yet crisp.
  5. Pour soy sauce over the stir fry, stir, and season with salt and pepper.
  6. Serve immediately over cooked rice.

Notes

For added flavor, garnish with chopped green onions or sesame seeds. You can also customize the vegetables according to your taste.
