Sobao Pasiego

A delightful, buttery cake from Cantabria, perfect for breakfast, snacks, or dessert.

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually combine dry ingredients with the butter mixture, alternating with milk.
  6. Stir in vanilla extract.
  7. Pour the batter into the greased pan and smooth the top.
  8. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
