Soft & Chewy Matcha Almond Cookies

Delightful almond flour cookies blended with the flavors of matcha for a chewy texture and nutty taste.

  • 1 cup almond flour
  • 2 tablespoons matcha powder
  • 1/2 cup macadamia nuts (chopped)
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, matcha powder, baking soda, and salt. Mix well.
  3. In another bowl, whisk together melted coconut oil, maple syrup (or honey), and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients and mix until just combined.
  5. Fold in the chopped macadamia nuts until evenly distributed.
  6. Scoop tablespoon-sized amounts of dough onto the baking sheet, spacing them apart.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Let cool on the baking sheet before transferring to a wire rack.

Notes
