Soft Honey Cookies

Soft and chewy honey cookies with a hint of warm spices, perfect for any occasion.

Ingredients

  • 2 large eggs (or flax eggs for a vegan option)
  • 1/2 cup neutral oil (vegetable or light olive oil)
  • 1/2 cup honey (or agave nectar for a vegan option)
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground Saigon cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/4 cup additional granulated sugar (for rolling the cookies)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the eggs, oil, and honey (or flax egg for a vegan version) and stir until well combined.
  4. In another bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon (if using), and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Shape the dough into 1-inch balls and roll each in the additional granulated sugar before placing them on the baking sheet.
  7. Bake for 10-12 minutes until the edges are golden and the centers are soft.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a vegan option, use flax eggs and agave nectar. Be careful not to overmix the dough.
