Swamp Rice Delight

A vibrant and nutritious one-pot dish combining Basmati rice, baby spinach, jalapeno, and fresh herbs.

  • 2 tablespoons Olive oil
  • 1 cup Diced onions
  • 1 teaspoon Kosher salt
  • 4 cups Baby spinach
  • 1 medium Jalapeno pepper (diced, with seeds removed)
  • 1 bunch Italian parsley (chopped)
  • 3 cloves Garlic (minced)
  • 2 Scallions (sliced)
  • 2 cups Basmati rice
  • 4 cups Water or broth

Instructions

  1. Wash the baby spinach and chop it coarsely.
  2. Heat olive oil in a large skillet or pot over medium heat.
  3. Add diced onions to the skillet and sauté for about 5 minutes until soft and translucent.
  4. Add minced garlic and chopped jalapeno, sautéing for another 2 minutes.
  5. Incorporate the baby spinach, cooking for 3-4 minutes until wilted.
  6. Sprinkle kosher salt over the mixture and stir in.
  7. Add Basmati rice, stirring to coat with the mixture.
  8. Pour in water or broth and bring to a gentle boil.
  9. Once boiling, reduce heat to low and cover. Simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  10. Fluff the rice gently with a fork and fold in chopped parsley and sliced scallions.
  11. Taste and adjust seasoning as desired.
  12. Serve warm, garnished with additional parsley or scallions if desired.

Notes

Customize the spice level with more or fewer jalapeños; serve with proteins like chicken or tofu.
