Taco Casserole

A delightful one-dish meal that combines seasoned ground beef, black beans, cheese, and crunchy tortilla chips into a layered casserole.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • Optional toppings: sour cream, avocado, cilantro, salsa

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a skillet over medium heat and cook the ground beef until browned, stirring occasionally.
  3. Drain off any excess fat to keep the casserole from being greasy.
  4. Add taco seasoning and diced tomatoes with green chilies, stir, and cook for 2-3 minutes.
  5. In a baking dish, layer half of the tortilla chips, followed by the ground beef mixture.
  6. Add black beans and half of the shredded cheese on top.
  7. Repeat with remaining tortilla chips, beef mixture, black beans, and the rest of the cheese.
  8. Bake for 20-25 minutes until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving, then add optional toppings.

Notes

Feel free to customize the casserole with additional vegetables or alternate proteins for a vegetarian version.
