Tater Tot Casserole

A comforting and delicious Tater Tot Casserole made with crispy tater tots, savory vegetables, creamy soup, and melty cheese.

  • 1 bag frozen tater tots
  • 2 cups mixed vegetables (bell peppers, spinach, onions)
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cream of mushroom soup, milk, salt, and pepper. Stir until well blended.
  3. Pour in the mixed vegetables and stir gently to coat.
  4. Grease a casserole dish with cooking spray or butter.
  5. Spread half of the frozen tater tots evenly across the bottom of the dish.
  6. Pour the vegetable mixture over the tater tots and spread evenly.
  7. Sprinkle shredded cheese generously over the vegetable mixture.
  8. Arrange the remaining tater tots on top and optionally sprinkle with more cheese or breadcrumbs.
  9. Bake for 30 to 35 minutes until tater tots are golden brown and cheese is melted.
  10. Let cool for a few minutes before serving.

Notes

For added flavor, consider serving with a dollop of sour cream or fresh herbs. This casserole also freezes well; store for up to 2-3 months.
