1 lb ground beef
1 medium onion, chopped
2 cups beef broth
1 cup uncooked pasta
1 can diced tomatoes
2 cups mixed vegetables (frozen or fresh)
1 tablespoon Italian seasoning
Salt and pepper to taste
In a large pot, brown the ground beef over medium-high heat until fully cooked, breaking it apart as it cooks (about 5-7 minutes). Drain any excess fat.
Add the chopped onion to the pot and sauté for about 3-4 minutes until onions are translucent.
Stir in the beef broth, diced tomatoes, uncooked pasta, and mixed vegetables. Add the Italian seasoning, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 15-20 minutes, or until the pasta is cooked through and the vegetables are tender. Stir occasionally to prevent sticking.
Taste and adjust the seasoning as needed before serving. If you like a thicker soup, consider adding a cornstarch slurry at this point.
Serve hot, garnished with fresh herbs or a sprinkle of cheese if desired.
