1 lb ground beef or Italian sausage
1 onion, diced
3 cloves garlic, minced
2 cups crushed tomatoes
6 cups chicken or vegetable broth
8 oz. lasagna noodles, broken
2 cups ricotta cheese
1.5 cups mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
2 tsp Italian seasoning
Salt and pepper, to taste
In a large pot over medium heat, add the ground beef or sausage. Cook until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes. Drain excess fat if necessary.
Stir in the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes and broth. Add the Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Stir in the broken lasagna noodles and cook according to package directions until al dente, usually about 8-10 minutes.
Once the noodles are cooked, stir in the ricotta cheese and half of the mozzarella cheese until melted and combined. Taste and adjust seasoning as needed.
Ladle the soup into bowls and top with remaining mozzarella and Parmesan cheese. Garnish with fresh basil or parsley for added touch.
