1 lb ground beef (or turkey)
1 can kidney beans
1 can corn
1 can diced tomatoes (14 oz)
1 packet taco seasoning
3 cups beef or vegetable broth
Optional Toppings: shredded cheese, sour cream, avocado, cilantro
Brown the Meat: In a large pot over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
Add Veggies: Stir in diced onions and bell peppers. Sauté for about 5 minutes until softened.
Add Remaining Ingredients: Pour in the diced tomatoes, corn, kidney beans, broth, and taco seasoning. Stir until well combined.
Simmer: Bring the soup to a boil, then reduce heat to low. Cover and let it simmer for 15-20 minutes, allowing the flavors to marry.
Adjust Seasoning: Taste the soup and adjust seasoning as needed. You may want to add more taco seasoning or a pinch of salt.
Serve: Ladle the soup into bowls and add your favorite toppings!
