Toasted Coconut Soft Sugar Cookies

Delightful soft sugar cookies infused with toasted coconut, perfect for any occasion.

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup coconut butter or frosting for topping
  • 1/2 cup toasted coconut flakes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt; set aside.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the sweetened shredded coconut.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, spread coconut butter or frosting on top and garnish with toasted coconut flakes.
  11. Serve and enjoy!

Notes

Chill the dough for 30 minutes for thicker cookies. Use toasted coconut flakes for added flavor.
