Tropical Pirate’s Watermelon Rum Salad

A refreshing salad that combines sweet tropical fruits with a splash of rum, perfect for summer gatherings.

  • 1 large watermelon
  • 1 cup pineapple, diced
  • 1 cup mango, diced
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/2 cup fresh mint, chopped
  • 1/4 cup lime juice
  • 1/2 cup Caribbean rum
  • 2 tablespoons honey (optional)

Instructions

  1. Cut the watermelon in half and scoop out the flesh into bite-sized pieces, keeping the rind for serving.
  2. In a large mixing bowl, combine the scooped watermelon, diced pineapple, mango, strawberries, and blueberries.
  3. In a small bowl, whisk together lime juice, rum, and honey (if using) until well combined.
  4. Pour the dressing over the fruit mixture and gently toss to coat the fruits.
  5. Sprinkle the chopped mint over the salad and toss gently again.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Serve in the hollowed-out watermelon rind for a festive presentation. Consider adding a scoop of coconut ice cream for extra indulgence.
