1 can (15 oz) of cannellini beans, drained and rinsed
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
4 cups vegetable broth
1 can (14.5 oz) of diced tomatoes
1–2 tsp dried Italian herbs
Salt and pepper to taste
2 tbsp olive oil
In a large pot, heat the olive oil over medium heat.
Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until they are soft and fragrant.
Stir in the minced garlic and cook for an additional minute. Be careful not to let the garlic burn.
Pour in the diced tomatoes and vegetable broth. Stir to combine.
Add the drained cannellini beans along with the dried Italian herbs, salt, and pepper. Bring the mixture to a simmer.
Let the soup simmer gently for about 20-25 minutes, allowing the flavors to meld.
