Walnut Maple Roasted Sweet Potatoes

A delightful combination of roasted sweet potatoes with maple syrup and walnuts, offering a perfect balance of sweetness and crunch.

  • 3 medium sweet potatoes
  • ⅓ cup melted unsalted butter
  • 1.5 teaspoons cinnamon (divided)
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ⅓ cup maple syrup + 2 tablespoons
  • ⅓ cup chopped walnuts
  • 1 teaspoon thyme

Instructions

  1. Clean and optionally peel the sweet potatoes, then cut into ½-inch thick rounds.
  2. Preheat your oven to 200°C (400°F).
  3. In a mixing bowl, combine sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, and pepper; mix thoroughly.
  4. Arrange the sweet potato slices in a single layer on a baking tray.
  5. Bake for about 25–30 minutes until fork-tender.
  6. In a separate bowl, mix maple syrup, walnuts, remaining cinnamon, and thyme for the topping.
  7. After the sweet potatoes have baked, top them with the walnut and maple syrup mixture.
  8. Return to the oven for an additional 8–10 minutes until the topping caramelizes.
  9. Let cool slightly before serving; optional to top with crumbled feta cheese.

Notes

For added flavor, consider using fresh herbs or alternating the nuts in the topping.
