Zesty Olive Garden Salad

A vibrant and refreshing salad featuring a mix of vegetables and a zesty dressing, perfect for any meal.

  • 8 cups chopped Lettuce
  • 1/4 cup shredded red cabbage
  • 1/4 cup julienned Carrots
  • 1/4 cup Red onion
  • 1/2 cup black olives
  • 2 pieces Roma tomatoes
  • 1/3 cup pepperoncinis
  • 1 cup croutons
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup extra virgin olive oil
  • 1 packet Zesty Italian Dressing Mix
  • 1/3 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon grated Romano cheese
  • 3 teaspoons sugar
  • 1 1/2 teaspoons mayo
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Wash all your vegetables thoroughly. Chop the lettuce into bite-sized pieces and place it in a large salad bowl. Add the shredded red cabbage, julienned carrots, and diced red onions.
  2. Slice the black olives and add them to the bowl. Cut the Roma tomatoes into bite-sized pieces or wedges and mix them in.
  3. Slice the pepperoncinis into rings and incorporate them into your salad.
  4. Sprinkle the croutons over the top and add the grated Parmesan cheese.
  5. In a separate bowl, whisk together the olive oil, Zesty Italian Dressing Mix, white vinegar, water, Romano cheese, sugar, mayo, Dijon mustard, Italian seasoning, salt, pepper, and garlic powder until smooth.
  6. Pour the dressing over the salad just before serving and toss gently to coat all ingredients evenly.

Notes

Serve immediately for the best texture. Keep dressing separate if storing leftovers.
