Cowboy Cornbread Casserole

A hearty one-dish meal combining savory ground beef, zesty beans, and sweet corn, topped with delicious cornbread, perfect for family dinners and gatherings.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup cornbread mix
  • 1 cup milk
  • 1 egg
  • 1 cup shredded cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat for 6 to 8 minutes until cooked through, draining any excess grease.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning, cooking for about 5 minutes.
  4. In a separate bowl, mix the cornbread mix, milk, and egg until smooth.
  5. Spread the beef mixture evenly in a greased baking dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle the shredded cheese on top.
  8. Bake for 25-30 minutes, or until the cornbread is golden brown.
  9. Allow to cool for a few minutes before serving.
