Crispy Smashed Carrot Bites

Deliciously crispy on the outside and tender on the inside, these carrot bites are a fun and healthy alternative to traditional snacks.

Ingredients

  • Fresh carrots
  • Olive oil
  • Salt
  • Freshly ground black pepper
  • Garlic powder
  • Paprika
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them into thick rounds, about 1-inch thick.
  3. Place the carrot rounds in a pot of boiling water and boil for about 10 minutes.
  4. Drain the carrots well to remove excess water.
  5. Line a baking sheet with parchment paper.
  6. Arrange drained carrot rounds on the baking sheet and gently smash each round with a masher or fork.
  7. Drizzle olive oil over the smashed carrots and season with salt, pepper, garlic powder, and paprika.
  8. Bake in the preheated oven for about 20-25 minutes until crispy and slightly caramelized.
  9. If using, sprinkle Parmesan cheese over the carrot bites during the last 5 minutes of baking.
  10. Remove from oven and let cool slightly before serving warm.

Notes

Serve with your favorite dipping sauces like ranch dressing or hummus. For added flavor, consider garnishing with fresh herbs.
