Delicious Fall Pumpkin Spice Roll Cake

  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda

  • 2 teaspoons Pumpkin Pie Spice Blend
  • 1 pinch Salt
  • 8 ounces Cream Cheese
  • 4 tablespoons Unsalted Butter
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking pan with parchment paper.
  2. In a medium bowl, whisk together pumpkin puree, eggs, and granulated sugar until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, salt, ground cinnamon, and pumpkin pie spice blend.
  4. Add dry ingredients to the pumpkin mixture and stir gently until combined. Pour the batter into the prepared pan.
  5. Bake for 15-20 minutes, checking with a toothpick for doneness.
  6. Let the cake cool in the pan for 5 minutes, then invert it onto a kitchen towel dusted with powdered sugar.
  7. Roll the cake up in the towel while still warm and let it cool completely.
  8. Beat cream cheese and butter until smooth, add powdered sugar, and then vanilla extract until combined.
  9. Unroll the cooled cake, spread frosting evenly, then roll it back up without the towel.
  10. Wrap in plastic wrap and chill in the fridge for at least one hour.
  11. Slice and serve with optional garnishes like cinnamon or whipped cream.

Store leftover cake in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
