Egg Yolk Nougat

A creamy and luscious treat made with egg yolks, sugar, and honey, perfect for any occasion.

Ingredients

  • 2 cups egg yolks
  • 2 cups sugar
  • 1 cup honey
  • 1 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Salt (to taste)

Instructions

  1. In a saucepan, combine the sugar and honey over medium heat, stirring until fully dissolved to create a syrup.
  2. In a separate bowl, whisk the egg yolks until light and frothy.
  3. Gradually add the syrup to the whisked egg yolks while whisking constantly to avoid scrambling the eggs.
  4. Transfer the mixture back to the saucepan and cook over low heat, stirring continuously until thickened.
  5. Remove from heat and stir in almond flour, vanilla extract, cinnamon, and a pinch of salt.
  6. Line a mold with parchment paper and pour the mixture into it; let cool completely at room temperature.
  7. Once cooled and set, cut into pieces and serve.

Notes

Can be enjoyed as a snack, part of a dessert platter, or given as a gift. Store in an airtight container, potentially with layers of parchment paper in between pieces.
