High Protein Ground Turkey Stuffed Sweet Potato

A nutritious and delicious dish combining creamy sweet potatoes with lean ground turkey, perfect for boosting protein intake.

  • 1 large sweet potato
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: Greek yogurt, chopped green onions, shredded cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potato several times with a fork and bake for 40-45 minutes until soft.
  3. Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 3-5 minutes.
  4. Add ground turkey, paprika, salt, and pepper. Cook for 6-8 minutes until browned.
  5. Let baked sweet potato cool, cut in half, and scoop out a little flesh.
  6. Mix scooped sweet potato with the turkey filling.
  7. Stuff the mixture back into the sweet potato skins.
  8. Add optional toppings before serving warm.
