Honey Garlic Butter Roasted Carrots

A delightful side dish of roasted carrots coated in a honey garlic butter sauce, perfect for any meal.

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika (optional)
  • 1 teaspoon lemon juice (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peeled and cut the carrots into uniform pieces.
  3. In a small bowl, combine melted butter, honey, olive oil, minced garlic, salt, pepper, thyme, and paprika.
  4. Toss the sliced carrots with the honey garlic mixture until evenly coated.
  5. Spread the carrots in a single layer on a prepared baking sheet.
  6. Roast for 20-25 minutes, flipping halfway through, until soft and caramelized.
  7. Drizzle with lemon juice and garnish with chopped parsley before serving.
