Loaded Frito Pie Magic

A hearty dish combining ground beef, beans, cheese, and Fritos, making for a delicious, messy pizza-like experience perfect for gatherings.

  • 2 Tbsp Extra-virgin olive oil
  • 1 MEDIUM white onion, chopped and divided
  • 3 cloves garlic, minced
  • 2 Tbsp Tomato paste
  • 1 lb Ground beef
  • 1.5 Tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 0.25 tsp Cayenne pepper
  • Kosher salt
  • Freshly ground black pepper
  • 28 oz can crushed tomatoes
  • 15 oz can pinto beans, drained and rinsed
  • 4 oz can green chili
  • 6 1-oz bags Fritos
  • Jalapeño, thinly sliced (optional)
  • 2 cups Shredded cheddar
  • Sour cream (for serving, optional)

Instructions

  1. Gather all your ingredients. Chop the onion and mince the garlic. Drain and rinse the pinto beans in a colander.
  2. In a large skillet, heat olive oil over medium heat. Add half of the chopped onion and cook until translucent, about 3-5 minutes. Add minced garlic and cook for another minute.
  3. Increase heat to medium-high, add ground beef and cook for 6-7 minutes, breaking the meat into smaller pieces as it cooks.
  4. Add the remaining onion, tomato paste, chili powder, cumin, oregano, cayenne pepper, salt, and black pepper. Stir and cook for 2-3 minutes.
  5. Stir in the crushed tomatoes, pinto beans, and green chilies. Simmer on low for about 10 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. In a casserole dish, layer the Fritos, meat mixture, and cheese. Repeat until all ingredients are used, finishing with cheese.
  8. Bake for 15-20 minutes until cheese is melted and bubbly.
  9. Let cool for a few minutes before serving. Top with optional jalapeños or sour cream.

Notes

You can customize with additional vegetables or different types of cheese.
