Maple Dijon Roasted Carrots and Apples

A delightful side dish featuring roasted carrots and apples, enhanced with a sweet and tangy maple Dijon glaze.

  • 4 carrots, peeled and cut into sticks
  • 2 apples, cored and sliced
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the maple syrup, Dijon mustard, and olive oil. Add salt and pepper to taste.
  3. Add the carrot sticks and apple slices to the bowl and toss to coat.
  4. Spread the coated vegetables on a baking sheet in a single layer.
  5. Roast in the oven for about 25-30 minutes, stirring halfway through.
  6. Garnish with fresh thyme and serve warm.

Notes

For added flavor, drizzle with extra maple syrup before serving. Store leftovers in an airtight container for up to 3 days.
