  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Mix in the maple syrup and the egg until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  • If time allows, chill the dough for 30 minutes to help the cookies maintain their shape.
  • Using a cookie scoop or spoon, drop the dough onto the baking sheet, spacing them about 2 inches apart.
  • In a small bowl, mix extra sugar with a little cinnamon. Roll each cookie ball in this mixture to coat.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  • Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
