2 tablespoons olive oil
1 pound boneless, skinless chicken breasts
1 medium onion, diced
2 carrots, sliced
2 celery stalks, diced
4 cloves garlic, minced
6 cups chicken broth
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
Heat olive oil in a large pot over medium heat; add diced onion and sauté until translucent.
