  • 1 cup cooked chicken breast, diced (optional)
  • 1 cup black beans, rinsed (optional)
  • 4 oz turkey sausage, crumbled (optional)
  • 1 cup Greek yogurt (optional)
  • 2 whole wheat bagels, cubed and toasted (bagel variation)
  • 4 oz cream cheese, softened (bagel variation)
  • 2 tbsp everything bagel seasoning (bagel variation)
  • 1/2 cup smoked salmon flakes (bagel variation)

Method
 

Instructions
  1. Wash and chop all vegetables - dice peppers and onion, halve tomatoes
  2. If using protein options, have them pre-cooked and ready
  3. Set out meal prep containers and have measuring tools handy
  4. Heat olive oil in a large skillet over medium heat
  5. Sauté onions and peppers until softened (3-4 minutes)
  6. Add spinach and cook until wilted (1-2 minutes)
  7. Whisk eggs in a bowl and pour into skillet
  8. Scramble eggs, stirring frequently until cooked through
  9. Season with salt and pepper
  10. Divide mixture evenly among 4 meal prep containers
  11. Top with cherry tomatoes and shredded cheese

Notes

Use high-quality microwave-safe, leak-proof containers with separate compartments. Keep refrigerated for up to 5 days or freeze for longer storage. Microwave for 60-90 seconds, stirring halfway through when reheating.
