- In a shallow bowl, whisk the egg. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each zucchini stick into the egg, then coat evenly with the breadcrumb mixture. Place on a plate as you work.
- Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't overlap.
- Lightly spray with cooking oil and air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce like marinara, ranch, or yogurt dip.
