Ingredients
  • 1 ripe banana (the riper, the better!)
  • 1 cup rolled oats
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup chocolate chips (optional)
  • Pinch of salt

Method

Instructions
  1. Preheat your oven to 350°F (175°C) and line a small baking pan with parchment paper.
  2. In a medium bowl, mash the banana until smooth. Add the maple syrup, cinnamon, and salt, mixing well to combine.
  3. Stir in the rolled oats until thoroughly coated. If using, fold in the walnuts and chocolate chips.
  4. Transfer the mixture to your prepared pan, pressing it down firmly into an even layer.
  5. Bake for 15-20 minutes, or until the edges are golden brown.
  6. Let cool completely before cutting into bars. This helps them hold their shape perfectly.

Notes

Use bananas with brown spots for natural sweetness. Store in airtight container for up to 5 days or freeze for longer storage. Recipe can be customized with coconut, dried cranberries, or different spices.
