- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, mash the ripe banana thoroughly with a fork until smooth.
- Add the egg, honey, milk, and vanilla extract to the mashed banana. Whisk until everything is well combined.
- In a separate bowl, mix the oats, whole wheat flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in any optional add-ins like walnuts or chocolate chips.
- Pour the batter into your prepared pan and spread evenly. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan before cutting into squares.
Notes
Use very ripe bananas with brown spots for maximum sweetness. Store in airtight container for up to 5 days or freeze for 3 months. For gluten-free option, substitute whole wheat flour with almond flour or gluten-free flour blend.
