  • 2 ripe bananas, mashed (about 1 cup)
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup chocolate chips or dried fruit (optional)

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, mash the ripe bananas until smooth. The riper the bananas, the sweeter your bars will be naturally.
  3. Add the honey or maple syrup, almond butter, vanilla extract, cinnamon, and salt to the mashed bananas. Mix until well combined.
  4. Stir in the rolled oats until everything is evenly coated. If using, fold in the chopped nuts and chocolate chips or dried fruit.
  5. Transfer the mixture to your prepared baking pan and press it down firmly and evenly using the back of a spoon or your hands.
  6. Bake for 20-25 minutes, or until the edges are golden brown and the center is set. Allow to cool completely in the pan before cutting into bars.

Notes

Use very ripe bananas with brown spots for natural sweetness. Customize with your favorite mix-ins like shredded coconut, chia seeds, or protein powder. Store in airtight container for 3-4 days at room temperature or freeze for up to 3 months.
