- In a large mixing bowl, combine the ground turkey, chopped onion, parsley, thyme, Dijon mustard, beaten egg, panko breadcrumbs, salt, and pepper. Mix gently with your hands until just combined - be careful not to overmix.
- Divide the mixture into 6 equal portions and shape into patties about ¾-inch thick. Use your thumb to make a slight indentation in the center of each patty - this helps them cook evenly and prevents puffing up.
- Heat olive oil in a large skillet over medium heat. Cook the patties for 5-6 minutes per side, or until they reach an internal temperature of 165°F. Alternatively, you can grill them over medium heat for the same time.
- While the burgers cook, lightly toast your buns. Serve the cooked patties on toasted buns with your favorite toppings.
Notes
Don't overmix the meat mixture, keep ingredients cold, chill patties before cooking, use thermometer to reach 165°F, let burgers rest 2-3 minutes before serving. Can be made ahead and frozen.
