- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
- In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt. Set aside.
- In a large bowl, beat the vegetable oil and sugar together until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gently fold the grated zucchini into the wet ingredients. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix.
- If using, fold in the chopped nuts and chocolate chips.
- Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Use fresh zucchini and avoid overmixing the batter for the best results. Customize with nuts, chocolate chips, or dried fruit for added flavor.
