- In a large mixing bowl, combine the ground turkey, grated onion, minced garlic, beaten egg, breadcrumbs, Worcestershire sauce, smoked paprika, oregano, salt, and pepper. Mix gently with your hands until just combined – be careful not to overmix as this can make the burgers tough.
- Divide the mixture into 4 equal portions. Gently shape each portion into a patty about ¾-inch thick. Use your thumb to make a slight indentation in the center of each patty – this helps them cook evenly and prevents them from puffing up.
- Heat olive oil in a large skillet over medium heat. Cook the patties for 5-6 minutes per side, or until they reach an internal temperature of 165°F. For grilling, preheat grill to medium-high and cook for the same amount of time.
- Transfer the cooked patties to a plate and let them rest for 3-4 minutes before serving. This allows the juices to redistribute throughout the meat, ensuring maximum flavor and tenderness.
Notes
Don't overmix the meat, chill patties for 30 minutes before cooking for better shape retention, make thumb indentation to prevent bulging, cook to exactly 165°F internal temperature, and let rest 3-4 minutes before serving for juicier burgers.
