  • 3 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon dried oregano

Instructions
  1. Cook the Pasta: Bring a large pot of salted water to boil. Cook pasta according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process.
  2. Prepare the Bruschetta Topping: In a large bowl, combine quartered cherry tomatoes, fresh mozzarella, chopped basil, diced red onion, and minced garlic. Season with salt and pepper.
  3. Make the Dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, lemon juice, honey, oregano, salt, and pepper until well combined.
  4. Combine Everything: Add the cooled pasta to the bruschetta mixture. Pour the dressing over everything and toss gently to combine. Taste and adjust seasoning if needed.
