  1. Prepare the marinade: In a medium bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried basil, salt, and pepper. Place chicken breasts in a resealable bag and pour marinade over them. Marinate for at least 30 minutes (or up to 4 hours for maximum flavor).
  2. Cook the chicken: Heat a grill or skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for 6-7 minutes per side, until chicken is cooked through and reaches 165°F internally.
  3. Create the balsamic glaze: While chicken cooks, pour reserved marinade into a small saucepan. Bring to a boil, then reduce heat and simmer for 5-7 minutes until slightly thickened. For a sweeter glaze, add honey or maple syrup (optional).
  4. Assemble the Caprese Chicken: Top each cooked chicken breast with sliced mozzarella and tomato. Cover and cook for 1-2 minutes until cheese begins to melt. Drizzle with balsamic glaze and garnish with fresh basil leaves.
