- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheet on a lightly floured surface. Cut it into rectangles or circles, depending on your preferred tart shape.
- Place the puff pastry pieces on the prepared baking sheet. Sprinkle a layer of shredded mozzarella and grated Parmesan cheese on each piece, leaving a small border around the edges.
- Arrange the sliced heirloom tomatoes on top of the cheese. Drizzle with olive oil and sprinkle with dried oregano, dried basil, salt, and pepper.
- Brush the edges of the puff pastry with the beaten egg. Bake in the preheated oven for 18-20 minutes, or until the pastry is golden brown and the cheese is bubbly.
- Remove from the oven and let cool slightly before serving. Garnish with fresh basil leaves if desired.
Notes
For the best flavor, use ripe and colorful heirloom tomatoes. You can experiment with different types of cheese, such as goat cheese or feta, for a unique twist. The tarts can be prepared ahead of time and refrigerated before baking.
